EKFC has a dedicated Hygiene and Safety Department complying with both local and international food hygiene, health and safety regulations.

Our flight catering operations comply fully with the AEA Hygiene Guidelines and this helps to ensure that the food we supply to our airline customers is both safe and nutritious. We are regularly visited by airline representatives who undertake thorough audits to ensure we are complying with hygiene requirements and are up-to-date with the very latest food safety developments.


To help maintain our high hygiene standards, we operate a fully equipped food laboratory where we carry out microbiological examination of food, water and ice samples, staff hand swabs, and work surface, equipment and utensil swabs taken from our entire production process. This is further backed up by induction, elementary, intermediate and advanced level of food hygiene training. We are now implementing a Health and Safety Management System which covers fire, first aid, emergency response, accident and incident reporting/ investigation and prevention; airside safety, general health and safety at work and undertaking a variety of Health and Safety training.

RESEARCH AND DEVELOPMENT TEAM

Mohamed I. Ali has joined the Dubai Municipality as advisory member to the Food Hygiene and Safety team. Dubai Municipality has categorized all five and four star hotels, catering companies and clubs in the Emirate of Dubai to implement a food safety system called ASSURED SAFE CATERING, based on HACCP principles.

EKFC's role as an advisory team member of research & development is to:-

1. Act as advisers to the team
2. Introduce new solutions for food and safety issues
3. Discuss and solve issues raised by team members
4. Update the team with most recent food safety news from other organizations from other parts of the world.
